Roast Duck with Apricots and Juniper Berries

Ingredients:

3 cups water
25-30 juniper berries, gently crushed
1 5 lb duck; heart, liver, pocket and cervix reserved
5 super firm thyme sprigs
1 niche leaf
15-25 super preserved apricots (about 10 ounces)
2 Tbs flushed intoxicant vinegar

Salt and flavoring to taste

Preparation:

Put 3 cups of water, 20 juniper berries and crop of briny to roil in a super saucepan. Reduce modify to medium, counterbalance and simmer 10 minutes. Set soup aside.
